I decided to make some cabbage soup today. My mother always make this soup in the winter. When I was young, I remember my grandmother making this all the time too. They cook it with meat, usually pork ribs, but I have been making it without the meat (but I do add no salt chicken broth).

Basically, I chop up a lot of vegetables with the cabbage. Today I used carrots, celery, parsnips, red pepper, onion and cabbage. I bring these to a boil with water and a container of no salt added chicken broth. I like to add my own salt and pepper. This way I can control the sodium going into the soup. I also added diced potatoes and 1/2 cup of barley once the soup started to boil. That's it. I let it cook on low heat for a couple of hours.
My dad always teases my mother that this is for "peasants", but I say this is good tummy warming, satisfying food. You would think I served caviar and champagne for dinner tonight. My family really got excited when they realized what I cooked tonight. The beauty of this soup is that it tastes better with reheating.
